Our Fullblood Wagyu Strip Steaks need little to make them outstanding. We generally just season with a little salt and pepper and are on our way. But our favorite carnivore and blogger has inspired us to get a little more creative in the kitchen. Jess Pryles created these six Flavored Compound Butter recipes specifically to compliment our Fullblood Wagyu steaks.
Compound butters are a great way impart unique flavor without overwhelming the naturally-occurring deliciousness of our Wagyu. Jess has laid created six different Compound Butters, each with a distinct taste.
These butters are super simple to make but will totally wow the crowd. Enjoy!
Wagyu Strip Steak with Flavored Compound Butter Recipe

You want to make the butters several hours to a day before using with steaks to make sure the butter is solid. These butters will keep for at least a week in the refrigerator if you want to make well in advance.
For Steaks
Ingredients
- Lone Mountain Wagyu 100% Fullblood Wagyu Strip Steak (1 per person)
- Kosher Salt
- Black Pepper
Directions
- Heat grill to medium high
- Season steaks lightly with salt and pepper (remember, you'll be adding quite a bit of flavor to them with the butter, so stay light)
- Sear each side for 1 minute on hottest part of the grill before moving to lower heat. Cook for 5-6 minutes on each side
- Remove and let rest for 5 minutes.
- Add butter after the steak has finished resting and voila!
For Butter
Directions
- Place a stick of salted butter in a bowl and let come to room temperature until it's extremely soft
- Add your ingredients for flavor (below) and mix until evenly distributed
- Scrape butter into a large piece of plastic wrap and roll, twisting ends to re-form into a tube
- Place in refrigerator to re-solidify (several hours to overnight)
Smoked Garlic & Thyme Butter
Smoky garlic makes this a steakhouse-style favorite
Ingredients
- Head of garlic
- 2 tablespoons fresh Thyme, chopped
- 1 stick salted butter
Directions
- Chop top off the head of garlic, leaving skin on. Wrap in a boat of foil with top exposed
- Place in smoker for 45-60 minutes until garlic is soft
- Squeeze cloves out of skins straight into butter. Add thyme. If you don’t have a smoker, you can fine mince and brown the garlic in a small skillet with some olive oil for a similar result
- Combine thoroughly
- Follow general butter directions above
Black Pepper & Mushroom Butter
The "umami butter"
Ingredients
- 8-10 dried shitake mushrooms
- 1 tsp Fresh ground black pepper
- 1 stick salted butter
Directions
- Place 8-10 dried shitakes in a bowl of hot water to reconstitute and soften, about 10-15 minutes.
- Drain shitakes from water and chop finely
- Add mushrooms to butter along with pepper
- Combine thoroughly
- Follow general butter directions above
Spicy Mustard Butter
A touch of parsley gives this spicy butter a fresh balance
Ingredients
- 2 tsp dijon, Creole, or seeded mustard
- 1/4 tsp cayenne pepper
- 2 Tbsp fresh parley, finely chopped
- 1 stick salted butter
Directions
- Add all ingredients to soft butter
- Combine thoroughly
- Follow general butter directions above
Bloody Mary Butter
Favorite cocktail + favorite steak = amazing
Ingredients
- 2-4 chopped sundried tomatoes
- 2 teaspoons horseradish
- Celery Salt to taste
- 1 stick salted butter
Directions
- Add all ingredients to soft butter
- Combine thoroughly
- Follow general butter directions above
Charred Scallion Butter
The charred flavor is the perfect compliment for a grilled steak
Ingredients
- 1 bunch scallions
- 1 stick salted butter
Directions
- Heat cast iron skillet over low-medium heat
- Add small amount of oil or cooking spray
- Cook whole scallions (minus the white roots) until they have completely softened and begun to take on some serious color and the tips begin to char and turn black.
- Remove scallions from pan and let cool
- Once scallions are cooled, finely chop and add to butter
- Combine thoroughly
- Follow general butter directions above
Ancho & Lime Butter
Bright and fresh with a definite Southwest flavor
Ingredients
- 1 tsp Ancho chili powder
- 1 lime
- 1 stick salted butter
Directions
- Add chili and juice from lime to butter
- Combine thoroughly
- Follow general butter directions above.
