Directions

Take steaks out of the refrigerator and let them sit to room temperature, about 20 minutes. While waiting for the steaks, prepare the butter.

Mix rosemary, garlic, ½ teaspoon salt, and black pepper into butter, using a food processor or with a fork in a bowl. Spoon the mixture onto wax paper and roll into the shape of a log. Twist the ends to make the log compact. Place in the freezer for 30 minutes to harden, then transfer to refrigerator until ready to serve.

Preheat the grill on high-heat. Season the steaks generously with sea salt and pepper. Place the steaks on the grill for about 3-5 minutes per side for medium rare (cook time will depend on the thickness of the steak). Remove steaks from grill and cover loosely. Allow steaks to rest for 5-10 minutes. Top with a slice of rosemary butter and serve!

Our Wagyu steaks in particular are best when cooked medium-rare. However if that really doesn’t please your palette, set your steak to the side of the grill away from direct heat to continue cooking.
