Ready for the Ultimate French Dip? There’s something special about a well-made roast beef. With a Lone Mountain Wagyu Sirloin Tip Roast, a few simple seasonings and a reliable meat thermometer are all you need for juicy, beautifully roasted beef. Slice it paper-thin, make a rich au jus from the pan drippings, and pile it onto toasted rolls for homemade French Dip sandwiches worth looking forward to.

Lone Mountain Wagyu Roast Beef

Tender, juicy, and perfectly medium-rare, this is a roast worth making for Sunday dinner and turning into something just as delicious the next day.

Ingredients

For the roast

1 Lone Mountain Wagyu Sirloin Tip Roast (3.5 lb)

2 tablespoons olive oil 1 teaspoon garlic powder

1 teaspoon freshly ground black pepper

2 teaspoons kosher salt, or to taste

1 teaspoon dried rosemary

1 yellow onion, cut into thick rings

(For the au jus): Pan drippings and rendered fat from the roast 2 cups beef broth, or as needed

(For the French Dip sandwiches): Thinly sliced roast beef, Crusty French rolls or hoagie rolls, horseradish, Provolone or Swiss cheese (optional)

Instructions

1\. Season the roast. Remove the roast from the refrigerator 45 to 60 minutes before cooking. Preheat the oven to 450°F. Pat the beef dry, rub with olive oil, and season with garlic powder, black pepper, kosher salt, and rosemary.

2\. Roast it. Arrange the onion rings in the bottom of a roasting pan and place the roast on top. Roast at 450°F for 15 minutes, then reduce the oven temperature to 300°F. Continue roasting until the internal temperature reaches 128°F to 130°F for a medium-rare finish after resting. Cooking time will vary, so use a meat thermometer rather than relying on the clock.

3\. Let it rest. Transfer the roast to a cutting board and loosely tent with foil. Let it rest until the internal temperature rises to approximately 135°F. Resting allows the juices to redistribute while the temperature finishes rising.

 4. Make the au jus. While the roast rests, place the roasting pan drippings and rendered fat in a saucepan or use the roasting pan if it is stovetop-safe. Skim off most of the fat before adding beef broth, then stir, scraping up the flavorful browned bits. Simmer for several minutes, then strain and adjust the seasoning as needed by taste.

5\. Slice it thin. For classic deli-style roast beef, let the roast cool enough to handle and use a countertop meat slicer to cut it as thinly as possible. A sharp carving knife works, too. Slice across the grain for the most tender bite.

6\. Build the French Dip. Pile the thinly sliced roast beef onto toasted rolls. Add provolone or Swiss cheese if desired, then serve warm with a side of homemade au jus for dipping.

If the roast cools before slicing, the beef will be cold on the sandwich. Dip the sliced beef in the warm au jus for 20 to 30 seconds to warm it through. Don't let it sit longer a simmering jus or it will cook past medium-rare.

The Best Part? Leftovers! A Lone Mountain Wagyu Sirloin Tip Roast makes more than an impressive dinner. Thinly sliced leftovers are ready for French Dips, roast beef sandwiches, or an easy next-day lunch that feels anything but ordinary.

Bring home the quality of 100% Fullblood Wagyu and make this your new Sunday roast.
